Abstract

The aim of this article is to propose an original synthesis of the correspondences between taste and other sensory modalities. For this, the authors present the concept of multisensory integration, understood as a process of correspondences and unity assumption, both facilitated by semantic congruence. Several studies that have investigated the taste/flavour perception and its correspondences are described. The main results found that specific sound parameters can modify the taste experience by adding significant pleasure to the consumer’s eating and drinking experience. However, it is important to highlight the relevance of ecological validity in intermodal studies. The authors present several lines for future research.
